2 tbsp vegetable oil
1 lb (450 g) boneless chicken breasts
1 tbsp curry seasoning
1 cup unsweetened coconut milk
1 pinch unsweetened dried coconut, optional
- Heat oil in a frying pan over medium heat.
- Brown chicken on both sides (about 8 minutes).
- Add remaining ingredients and simmer, covered, for 20 minutes.
- Sprinkle with coconut, if desired, and serve.
